These Smoked Gouda & asparagus frittata ‘Muffins’ are healthy, homemade dupe for the Starbucks Egg Bites.

Homemade Starbucks Egg Bites Dupe

One of the key ingredients in this recipe is asparagus, which is a great source of folate, a nutrient that is especially important for pregnant women. Folate is essential for healthy fetal development and can help reduce the risk of birth defects. But even if you're not pregnant, asparagus is a great vegetable to add to your diet as it's also rich in vitamins A, C, and K, as well as fiber.

To make these frittata ‘muffins’, you'll need:

  • 10 eggs

  • 2 shallots, chopped

  • 1 ½ cup smoked gouda, grated

  • 1 cup asparagus, chopped 

  • ¼ cup milk of choice

  • 1 tablespoon EVOO

  • Salt, to taste

  • Black pepper, to taste

Here’s how to make it:

Start by preheating your oven to 375 degrees F/190 degrees C and lining a muffin tin with paper muffin cups.

Next, heat olive oil in a large skillet over medium heat. Add chopped shallots, chopped asparagus, salt, and black pepper to the skillet and sauté until the asparagus is just underdone, usually about 5 minutes.

In a separate bowl, whisk together eggs and milk of your choice. Then, stir in the shredded gouda and cooked veggies. Tip the mixture into the muffin cups, top with additional shredded gouda, and bake for 30 minutes or until the eggs are set.

Once they're done, remove them from the oven and enjoy them hot or cold! These frittata ‘muffins’ are a great breakfast option that you can make ahead of time and grab on-the-go. They're also a great option for a light lunch or snack.
