3 Healthy Easter Recipes to Make This Weekend
The Easter weekend is right around the corner, and we know all too well that these holidays are often accompanied by plenty of sweet treats and sugary concoctions. We love Cadbury eggs and chocolate bunnies as much as anyone, but eating all that candy never makes us feel good. So we wanted to share a few healthier takes on Easter treats to help you feel your best this Easter weekend!

1. Vanilla Cupcakes With Fresh Berries
We'll be spending our weekend making these delicious, healthier vanilla cupcakes with fresh berries. Give them a try!
Ingredients you'll need:
1 cup plain greek yogurt
1/2 cup applesauce
1/2 cup coconut oil
2 eggs
1/2 cup coconut sugar
2 tsp. vanilla extract
1 cup all-purpose flour
1/2 cup whole wheat flour
3 tsp. baking powder
whipped topping
mixed berries
How to make them:
Preheat oven to 350°F/ 180°C
Whisk eggs, sugar, vanilla, and melted coconut oil until light
Add greek yogurt and applesauce to mixture and whisk to combine.
In a separate bowl, whisk together flour and baking powder. Fold into wet mixture and stir until just combined.
Pour into baking tin lined with parchment paper. Bake for 25-30 minutes.
Remove, allow to cool, and decorate with berries and whipped topping. Enjoy!
2. Better Eggs Benedict & Quinoa Cakes
Eggs Benedict is the kind of meal we usually only get when we're out at brunch. But trust us--it's surprisingly easy to make! It takes about 30 minutes to pull together, and this recipe will feed 4.
Ingredients for the quinoa cakes:
1.5 cups cooked quinoa
1/2 cup bread crumbs
1 egg
2 egg whites (save egg yolks for hollandaise!)
1 scallion
Small handful of grated extra sharp cheddar cheese
Sprinkle of Himalayan pink sea salt and fresh ground pepper
Olive oil
Ingredients for the hollandaise:
2/3 cup plain Greek yogurt
1 tsp. lemon juice
2 egg yolks (saved from quinoa cakes recipe!)
Sprinkle of Himalayan pink sea salt and fresh ground pepper
1/4 tsp. Dijon mustard
Ingredients for the eggs:
2/3 cup plain Greek yogurt
1 tsp. lemon juice
How to make them:
Prepare Quinoa Cakes: Cook quinoa according to package instructions, if not already cooked. In a mixing bowl, combine cooked quinoa, bread crumbs, finely chopped scallion, grated extra sharp cheddar cheese, Himalayan pink sea salt, and fresh ground pepper. Add the egg and egg whites to the mixture. Mix until well combined.
Form the quinoa mixture into small patties, about the size of your palm.
Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Carefully place the quinoa cakes in the skillet and cook for about 4-5 minutes on each side, until golden brown and crispy.
In a small saucepan, whisk together plain Greek yogurt, lemon juice, egg yolks, Himalayan pink sea salt, fresh ground pepper, and Dijon mustard.
Place the saucepan over low heat and continue whisking until the mixture thickens slightly. Remove from heat and set aside.
In a large skillet, bring about 2-3 inches of water to a gentle simmer. Stir in a teaspoon of lemon juice.
Crack each egg into a small bowl or cup.
Carefully slide the eggs into the simmering water.
Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.
Once cooked to your liking, remove the eggs from the water using a slotted spoon and place them on a paper towel to drain.
Assemble Eggs Benedict & Quinoa Cakes by placing a quinoa cake on a plate, and topping with a poached egg. Spoon hollandaise sauce generously over the egg. Garnish with fresh herbs, if desired.
3. Easy Easter Bunny Pancakes
Weekends are designated pancake-for-breakfast days in our book, so why not whip up some Easter-themed creations your kids will love?
Ingredients you'll need:
1 egg
2/3 cup milk (or non-dairy milk)
1 overripe banana
1 TBSP honey
1 TBSP baking powder
1 tsp. vanilla extract
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 small banana
2 TBSP melted coconut oil
Mini chocolate chips
Berries and banana, to top
How to make them:
Mash banana well, and mix in milk, honey, egg, melted coconut oil, and vanilla. Whisk well!
In a separate bowl, whisk together flours, baking powder, and a pinch of salt
Fold dry mixture into wet, and stir until just combined.
Heat a pan over medium heat, and grease lightly with coconut oil.
Pour pancake mixture into pan, and flip once bubbles start to form. Arrange into a bunny shape, decorate with your kids, and enjoy!
